Dinner: Djaj mqalli, otherwise known as chicken with preserved lemons and olives, one of the classic Moroccan tagines. Sadly, I do not own a tagine, so this is the stove top version, which is a minor quibble.
I used chicken thighs as a compromise for flavor and ease of prep. I still have not been able to figure out exactly what kind of olives are used in Morocco, and therefore, the best equivalent. So these are the only green olives I could find that seemed valid. I suspect they may be a little too mild, but oh, well.
It made a lot of difference using good turmeric and saffron (i.e., not old and really saffron which was probably from Iran even though it said it was Kashmiri). The sauce really thickens up and is yummy. Would do again.
That looks delicious, and I don't even particularly care for olives.
