I guess the good news about the Mast Bros.
I guess the good news about the Mast Bros. fracas is that everyone is now highlighting all the bean to bar and small chocolate makers in the US (and elsewhere). You'd think there's already an insane number of chocolate companies out there, but no, and I have tried A LOT of different kinds of high end chocolate.
Of these, though, I have only ever heard of 3, tasted 1. While I haven't had this particular list's bar made using it, I know the specific Marañón type of cacao. It's the plant that was supposed to be extinct, then somebody found some and there was a super limited production (of which I had some when I was in Vancouver). Apparently, it has rapidly expanded and there are now several companies making chocolate bars out of it. So I've had chocolate made from that specific varietal of cacao, just not this company's chocolate made from it. Does that count as a half score? Anyway, something else to keep a list of for when I have money.
