I made falafel from scratch tonight, but I used fresh peas as the seasonal legume. They came out really well and I would do this again. The only tweaks I'd use is I like onion and garlic, so I'd up the garlic to 3 or 4 cloves, and the onion from a half to a whole one. I might add a tiny bit more coriander and cumin, as well, but not much. Definitely recommend this twist. It's a little lighter than chick peas or favas and it's a pretty green color.
