So, the other day I mentioned making a pumpkin, pear, celeriac, blue cheese soup. This would be that weird soup thingy, which tastes good. It came out a pale golden yellow color. Mostly, it tastes like a milder, sweeter celery root soup, with a very mild pumpkin/squash flavor. You get an aroma, more than a flavor of blue cheese.
Cut up and roasted pumpkin in oven first.* Scooped out flesh, mashed with potato masher and some buttermilk.
Sauteed 1 lg spanish onion and two minced garlic cloves in olive oil - softened, not browned - in big soup pot.
Added 1 cup of white wine.
Added big celery root that was cut into 1/2" or smaller cubes, 1/2 cup buttermilk, 4 cups chicken broth.
Brought to a boil, then active simmer for 15 min.
Added 2 cups water, more simmering.
Added 2 cut up pears, 3/4 tsp nutmeg, 1/2 tsp marjoram, 1/8 tsp white pepper, more simmering.
When everything was pretty soft, turned off heat, got out immersion blender.
Blendered until smooth, back on low heat.
Added 1 cup cream top whole milk and a couple ounces crumbled blue cheese.
Blendered until smoother.
Ate.
I am not so fond of pie pumpkin, based on this particular experience. I mean, it's ok, but it's nothing special. Maybe even a little bland and sourish. It was a good way to use it, but I wouldn't go buy one. You must have to add a lot of sugar to make a pie from scratch.
I really like marjoram as a sweet herb and it goes well with nutmeg.
I need to learn more about blue cheeses. I rarely eat them, but it would have helped to know them better. The one I picked was too tangy, and even a little bitter when mixed with everything. The aroma is great, but I think it would do much better with, say, steak. That would be amazing. I like gorgonzola dolce, but I don't know if it's the best kind of sweet blue cheese for this sort of thing? I've never really had roquefort, either, and that sounds yummy.
*Side dish: roasted pumpkin seeds with olive oil, zataar, sumac, cumin, onion powder, garlic powder.
