Tried something new (which may be because it is a new product, don't know). Trader Joe's has a gingerbread baking mix, which can be used to make many forms of gingerbread. I went for the cookies. Which obviously started out as gingerpersons. Then the inevitable not enough dough left for that cut-out, so made thinner tiny snowflake cut-outs. Then the very last bits got flattened into tiny circles. Or, you know, if you want to go for a holiday thing, reindeer droppings.

Anyway, the thicker ones came out nice and chewy, the thinner ones nice and crispy. And the spice level in this mix is excellent, aromatic and tasty without overdoing it. Unless you like bland gingerbread. In which case we have nothing to discuss, because you probably like that stuff they call ginger ale instead of ginger beer.

It is a little on the buttery side, ok, a lot, so you absolutely have to refrigerate it to work with it as cookie dough. I did it overnight, then let it thaw a little at room temp. You do need flour to keep it from sticking, but not much. I got about 14 big (these are approx 4" high) cookies out of a box of mix. Plus a good half dozen tiny (approx 1") cookies.
