Unintended consequences: Another result of too many lemons. See, there were too many lemons, so I made lemon curd. But then there were extra egg whites, so I made coconut macaroons. Plain (i.e., vanilla), plain chocolate dipped, and almond. They're just unsweetened, unsulphured, flaked coconut with egg whites, some sugar (there's roughly 1 tsp per cookie), and the vanilla or almond extract. They're quite decent sized, as well.
As an aside, I thought, wow, that's a lot of sugar. Then I calculated it for your average cookies, like chocolate chips or oatmeal or peanut butter. Turns out it's not a lot of sugar per cookie.
The lemon sauce for the asparagus was also a result of the too many lemons. So be warned. Always count your lemons before you buy, or you never know what might happen.
At my house, buying too many lemons would lead to a pile of moldy lemons in the trash six months later.
