Potato photo of tonight's dinner - enchilada sauce style crema made from roasted green hatch chiles, served over buckwheat noodles with yam, mushrooms sauteed in Mexican inspired herbs and spices, and squash seeds I toasted all by myself. Other than the noodles, it's all very Mexican derived. Also, totally tasty.

The sauce is basically a green chile enchilada sauce that I then added sour cream to to get that tangy thing. I can only explain the noodles by saying that I have been seriously craving noodles the last week or so.
