SOTW - Soup of the Week: Celery Root. I happened to have some cream around, so that's the whiter shade of white swirl. I have no idea how you are supposed to make this soup white. You would only be able to use a tiny bit of each leek and each celery root after you trimmed all the green, brown, beige, and celadon colored bits off. Actually, maybe this is celadon colored.
Anyway, it's quite healthy aside from the cream I added in this picture. Or I should say, nutritious. It's a very light but tasty soup. Lots of variations available: cook with some butter instead of part of olive oil, use white instead of black pepper, add pear or apple along with celery root. Etc.
What I used:
6-8 cups of chicken broth
3 small celery roots, peeled and fibrous bits trimmed off, cut into small to medium dice
4 small to medium leeks, just the (ha) white bits cut up
2 cloves garlic, smashed or sliced
3-4 Tbls olive oil
1/4 tsp ground chipotle
dash black pepper
1 tsp nutmeg
Soften up the leeks in the olive oil
Add garlic
Add 4-6 cups of chicken broth
Add celery root
Bring to boil, then simmer for a long time until celery root is smooshy, adding broth as needed to have enough to blend later
Turn off heat
Immersion blender or what have you
Back on heat
Add broth if too thick
Add spices
Simmer for a bit, taste, adjust as needed
Makes about 2 quarts
