Hm. Photo at bizarre angle. Oh, well. This is what I've taken to calling the Trader Joe's quiche, otherwise known as a mushroom leek quiche. When I'm feeling lazy, I get 1 box of frozen pie crust, 1 bag of frozen "mushroom medley", 1 bag of cut frozen leeks, 1 container of "crumbled goat cheese" and make a quiche in a pie plate. It's a pretty big pie plate (9.5 or 10").
For this version I used 1 crust, wrestled into the plate, blind baked. Heated through the mushroom and leeks, with the addition of some chervil, marjoram, tarragon, and thyme. Mixed 4 large eggs with a 1/2 cup of cream and 1/2 cup of milk. Cooled crust and veggies a bit. Layered about 2/3 of veggies in crust, sprinkled container of goat cheese over, poured egg mixture over, and baked. Ta-da, quiche.
