Pretending to be normal
Pretending to be normal ... The ras el hanout mentioned a few days ago was for this. More specifically, I had some awesome halibut that I decided to try a new thing with - sesame crusted. It needed a side.
The halibut was dredged in seasoned flour, egg, and sesame seeds, then shallow fried. The texture came out great, but that's one of the things I like about halibut, its texture. Unfortunately, I'm pretty sure I do not like the taste of sesame seeds with halibut. Sad face. I'm sure there is something upon which this crust would have tasted wonderful; it was certainly nicely crispy. Just not halibut.
I decided that some sort of Moroccan-ish veggies would go well with the sesame taste, hence my ras el hanout. I did not go full tagine on this. I browned the onions in a little olive oil, added the spices and let that percolate, added some slivered garlic, then added the carrots (wanted them cooked, not mushy). This came out amazingly well. The fresh spice mix had more kick than I expected, but not in a bad way. Plus, if it were really a tagine, you add more of other flavors and spices that would tone that down significantly. Anyway, would totally do again.
I am now seriously tempted to try to make b'stilla, which to me always really tastes of ras el hanout. Although, I suspect I would have to do it without pigeon.
