Not a great photo, but dinner tonight was sea bass, which is hidden under the tasty things with which I cooked it. I made almost a paste out of mixed minced up olives (castelvetrano, kalamata, & picholine), capers, roasted pimento (made this summer), and roasted, slightly fermented garlic (home made). Placed the fish into heated basil olive oil (made from basil blossoms from this summer), covered it with the paste, then covered that with diced tomatoes and added the juice from the tomatoes, some rough diced artichoke hearts, and some haricots. Let it simmer and braise and then ate!
