I discovered a local dairy producing what they called kaymak. I will eventually get some to try, but I'm betting it is more like clotted cream, since it is sold in small jars. Nonetheless, I shall continue eyeing it and hoping.

  2. Well, I am suspect it is not the same, because how could it be, but you never know. I mean, I've never seen anything in this country labeled kaymak before, so there is hope. Also, refrigerated overnight shipping would cost more than it does.

  3. That said, this dairy is kind of cool. They differentiate between yogurt, quark, kaymak, clotted cream and a bunch of other stuff, so they may really be using the finite differences in technique. They do have free-rangy grass feedy cows from whence they get the milk, which you can also buy.
