You know what kills me, and it does, I'm writing this posthumously, the organic, hormone free, GMO free, antibiotic free heavy cream all has additives in it. Yes, that's right. Never read a label. I mean, I expected there to be stuff in a lot of the common, garden variety brands of heavy cream. Just go full pellet and be done with it, already.

  2. No. Also, this is national. In the garden variety commercial products one reason is probably because they ultrapasteurize the cream to death, so if they don't add a thickener, it won't properly whip. What the reason with the see-list-above 'better' products is to add such, I don't know. If your cream has a high enough fat content, and you make a little effort, it will whip. Now, if what they are trying to do is create an artificially stiffer and more stable whipped end product, that would also possibly explain the additives. All that suggests to me is there are people who don't know what real whipped cream is or what to do with it.
