Dinner. Baked fresh wild caught halibut in a pan sauce of apples, onions, and cumin seed. Served over wild rice with delicata squash. I saved some of the apple slices so there would be something crunchy on the plate, and they are pretty. I brushed some maple syrup over the cut edge of the squash before I baked it.

The sauce is made from one sweet onion (Maui's were what we had here), one honeycrisp apple, and 1/2 tsp of cumin seeds. Very thinly sliced apple and onion. Slooowly cooked onion in olive oil over low heat. Eventually added cumin seeds when onions were looking soft and tasty. Added apple slices (except ones I saved) after that and let them get a little softened. Added 2 tsp of cider vinegar and a pinch of black pepper. Stirred a bit more for about a minute. Turned off heat.

Seasoned fish with a tiny bit of black pepper, onion powder, garlic powder. Placed bed of sauce in baking dish, placed fish on top, smothered with rest of sauce. Baked at 375 for 30 minutes (It was a half pound piece of fish).
