All my life, cupcake/muffin pans have had 12 indentations. Why, oh, why, then, have there forever been recipes for 8, or 9, or 16, or anything other than 12 cupcakes or muffins in a recipe?

  1. Specific example of why this is irritating: recipe for 16 muffins needs 2 eggs. If you want to make 12 muffins, you need 1 1/2 eggs. Precisely divide the yolk and the white of one egg - go!

  2. Eggs are not actually that precise a measure, given how much they vary in size. Just use two, and your muffins will be a bit poofier but still work fine.

  3. Yeah, just use two small ones.

    A canonical egg is 50 grams. They vary in practice from anywhere around 40 to 60, or even a bit beyond that. Any recipe where it needs to be precise would be specifying precise number of grams, not just n eggs.

  4. Actually, the general imprecision of most recipes is what makes this even more annoying. I would rather have it by weight and volume, although I wonder if they separate out volume of whites and volume of yolks? Sadly, while I do not like hockey puck muffins, I do not like super poofy ones, either. I'm fussy.
